Recipe Courtesy of Dave Lieberman

Ingredients

  • 2 tablespoons unsalted butter
  • 1 medium onion, finely diced
  • 2 celery stalks (reserve tender leaves) trimmed, quartered lengthwise, then sliced into 1/4-inch pieces
  • 3 tablespoons all-purpose flour
  • 2 cups chicken or vegetable stock
  • 2 (10-ounce) cans chopped clams in juice
  • 1 cup heavy cream
  • 2 bay leaves
  • 1 pound Idaho potatoes, cut into 1/2- inch cubes
  • Salt and freshly ground black pepper

Pan Toasted Croutons:

  • 2 to 3 tablespoons unsalted butter
  • 1/2 baguette, cut into 1-inch cubes
  • 3 tablespoons freshly chopped flat-leaf parsley
  • Salt and freshly ground black pepper

Directions

Heat the butter in a large pot over medium-high heat. Add the onion and celery and saute until softened, mixing often. Stir in the flour to distribute evenly. Add the stock, juice from 2 cans of chopped clams (reserve clams), cream, bay leaves, and potatoes and stir to combine. Bring to a simmer, stirring consistently (the mixture will thicken), then reduce the heat to medium-low and cook 20 minutes, stirring often, until the potatoes are nice and tender. Then add clams and season to taste with salt and pepper, cook until clams are just firm, another 2 minutes.

For the Pan Toasted Croutons:

Melt the butter in a large skillet and toss the bread cubes in the butter until browned and toasted, about 2 to 3 minutes. Add parsley and season with salt and pepper.

·                     1 1/2 qt. Green bell pepper, diced
·                     1 1/2 qt. Zucchini, thinly sliced
·                     1 1/2 cups Pine nuts
·                     1 cup Olive oil
·                     3 cups Tomato paste
·                     3 cups White wine
·                     1 1/2 Tbsp. Rosemary, crumbled

·                     1 Tbsp Pepper
·                     1 1/2 qt. Tomatoes, chopped
·                     4 1/2 lb. Sliced cheddar cheese

Place onions cut-side up in pan; add water to come halfway up the onions. Cover and bake in 400-degree oven for 40 minutes or until onions are fork tender. Drain well.
For stuffing, sauté bell pepper, zucchini, pine nuts and chopped onions in oil until tender.
Add tomato paste, wine, herbs, garlic powder, salt, pepper and tomatoes. Cook until blended and soft. Stuff about 2-1/2 oz. (1/4 cup) filling into each onion half.
For each serving, place 2 stuffed halves in individual baker. Top with 3 oz. cheese. Bake covered at 425-degree oven for 25 minutes or until hot in center.

Green Beans with Peanut-Ginger Dressing

Ingredients:

  • Coarse salt
  • 2 pounds green beans
  • 1 cup unsalted dry-roasted peanuts
  • 3 tablespoons rice wine vinegar
  • One 1-inch piece of ginger, peeled and coarsely chopped
  • 1 garlic clove, coarsely chopped
  • 2 tablespoons soy sauce
  • 1 tablespoon granulated sugar
  • 2 tablespoons vegetable oil
Make it your own
Top the green beans with almonds (or your favorite nut) instead of peanuts.

Directions:

1.      Bring a large pot of salted water to a boil and trim the green beans. Add the green beans to the boiling water and cook until crisp-tender, about 4 minutes. Drain in a colander, rinse under cold water and drain again. Refrigerate.
2.      In a food processor, pulse the peanuts until coarsely chopped. Reserve 1/3 cup of the chopped peanuts for garnish. Continue pulsing the remaining peanuts until finely chopped. Add the vinegar, ginger, garlic, soy sauce, sugar, oil, 2 tablespoons of hot water and 1 teaspoon of salt to the peanuts and blend until the dressing is almost smooth, scraping down the sides of the bowl several times.
3.      Toss the green beans with the dressing. Sprinkle the reserved chopped peanuts over the green beans just before serving.
